You might visit https://www.pristineclassical.com/ and look around. Andrew Rose appears to be the world’s leading expert at gleaning the best possible sound out of old material, especially 78s. He writes a ton about his process on each release.
And yes you definitely need a 78 needle. A modern diamond will produce sound but is such a loose fit to the relatively massive groove the SQ is quite poor. And possibly damaging to the records.
The RIAA EQ of modern preamps is not great for 78s either, so I suggest using a flat preamp (mic input maybe) and fixing in software to taste.
